Darlings! When I lived in Sydney, there was a very famous breakfast cafe called Bill's (Chef Billy Granger) that had the most amazing ricotta pancakes! People would line up down the block to eat his dense, rich, cheese-laden pancakes! I made them for my husband for brunch today and they are outstanding! Here's an adapted recipe I cut out from the Sydney Morning Herald years ago:
NOT BILL'S RICOTTA HOTCAKES
Makes 15

2 eggs
250 g ricotta
60 ml milk
125 ml natural yogurt
60 ml oil
2 t powdered sugar
180 g self rising flour
1 t baking powder
1/2 t salt

Beat eggs and ricotta. Add milk, yogurt, oil and sugar. Add the sifted flour, baking powder, salt and stir until just combined.
Fry the hotcakes (I use a quarter cup measurement) on hot oiled fry pan or griddle. Turn when bubbles appear on top and the underside is brown. Keep warm and serve!
La Diva modification: Add a few blueberries to each pancake on griddle, serve with real maple syrup and butter!

I like the blueberry pancakes, but I doubt I could get The Mrs. to go for the cheese. And I like fluffy pancakes anyway. But you've put me in the mood for regular blueberry pancakes, so if I see blueberries in the store this week (at a reasonable price) I just might make some.

buzz, hate to say it but turning it on does help. I don't get so many spammy comments anymore. Listen, you don't really taste the ricotta in the pancakes but it does make them richer and slightly sweet with the sugar. I say make them, not tell "The WIFE" there's ricotta in them and see what she says! They are pretty ding dang good, I doubt she'll resist!
